Quote of Inspiration

I saw my life branching out before me like the green fig tree in the story. From the tip of every branch, like a fat purple fig, a wonderful future beckoned and winked. One fig was a husband and a happy home and children, and another fig was a famous poet and another fig was a brilliant professor, and another fig was Ee Gee, the amazing editor, and another fig was Europe and Africa and South America, and another fig was Constantin and Socrates and Atilla and a pack of other lovers with queer names and offbeat professions, and another fig was an Olympic lady crew champion, and beyond and above these figs were many more figs I couldn't quite make out. In the Oven

I want to workout during naps today, so I threw together the angel food cake while my son played on the kitchen floor. The cake is now in the oven. Let me just say, that was a lot of sifting, and since I didn't have a hand mixer, I used my standing mixer the entire way through.

I don't have high hopes. While most recipe reviewers said the cake is fab, one woman said her came out a heaping flop of a mess, and I somehow think this will be my future.

This seems like a waste, but I can't think of how a dozen egg yolks would fit into a healthy diet.....

  1. You can do it, MamaP! The photo of the batter in the pan looks exactly as it should, so my guess is it's going to turn out wonderfully. I've made angel food cake quite a few times. (It's one of my favorites; I have fond memories of my grandma making angel food cake with strawberries & whipped cream for my birthday.) In any case, the trick is to not overwhip the egg whites and to GENTLY fold them in with a rubber scraper (i.e., dumping the egg whites into the middle of the batter and scooping the batter from the outside into the egg whites in the middle without stirring it too much.) As for those egg yolks, you can make another yummy dessert from them: custard. Or you can freeze them for use later on. (Google "leftover egg yolks" or "egg yolk recipes.") Also, if you don't have it, I HIGHLY recommend Mark Bittman's "How to Cook Everything" cookbook. He has a tons of simple recipes and really explains things thoroughly if you're nervous about trying a new cooking method. May your angel food cake be divine!

  2. Thanks Monica! I'm using Bittman's book tonight to make Chicken Adobo. I never thought to consider him regarding desserts! The cake is resting/cooling now.....hope it turns out!
